Viral Celery Salad

We tried the viral “celery salad” – and we have some suggestions.
Admittedly, when I made it, I didn’t really follow a recipe, I just measured with my heart.
But, here is a basic recipe (and keep reading for our suggestions) –

“Viral Celery Salad”
Ingredients
1 shallot, sliced thinly (okay, I didn’t use this because I don’t love onions)
1 lemon, juiced
4 Tablespoons Extra Virgin Olive Oil
1/2 teaspoon salt
1/4 teaspoon pepper
6 stocks of celery, sliced
1 cup dates
1 cup Parmesan cheese
3/4 cup walnuts, chopped

Directions
– Toss all ingredients together!
– Some recipes call for soaking the shallots in the lemon juice with the salt and pepper while you prep everything else and then mix it all together.

IT2 Ideas
We both really liked the salad, but here are some of our suggestions –
– Some say that it was “better” the next day. Amy disagrees, while it was still good… it was the best when it was fresh!
– Try feta instead of Parmesan
– Try an infused olive oil or a vinaigrette (try Olivelle from Creative Kitchen for some fun flavors)
– Some small sliced honey crisp apples might be a fun addition
– If you don’t like walnuts, any nut would be great

We both agreed we love this fresh salad and some version of it would be a great addition to our summer meal planning!
