Our Father’s day inspired recipe is from a pretty cool dad and grandpa himself, Rick Gefroh.
Candied Bacon (on the smoker!)
1 pound of thick cut bacon
1/2 cup brown sugar
1/4 cup maple syrup (the real stuff!)
1 teaspoon fresh course ground pepper
Mix ingredients in a bowl, then add bacon
and mix by hand to coat the bacon.
Then twist the bacon and place on a bacon/ cooling rack to put in smoker.
(You don’t want the bacon to sit in grease.)
Put in a smoker at about 300-350 degrees for about 2 hours. Make sure to watch so the ends don’t start burning and rotate as smokers and grills have hot spots.
Keep temp controlled and under 400 degrees to keep under the flashpoint of bacon grease.
(And, as Rick says, “the cook needs a whiskey in one hand!”)
