Thanksgiving Leftovers and Deviled Eggs – 3 Ways

To start with, if you are still looking at Thanksgiving leftovers in the fridge, let’s start with the best way to use them: waffles. Use the stuffing to make a waffle and pile on your mashed potatoes, turkey and some gravy. A savory Thanksgiving leftover waffle. You won’t be disappointed. This is a JJ Gordon special.
Now, let’s get talking about the holidays. Deviled eggs are always a hit at our homes. And, a great shareable for you to take to others if you aren’t hosting. Here are recipes for 3 different types of deviled eggs.
First, hard boil your eggs. Or, buy them already hard boiled. Hey, if you are short on time, this is the way to go. No judgment here.
If you are making them on your own – Place the eggs in a saucepan and fill the pot with water to ½-inch above the eggs. Over high heat, bring the water to a rolling boil, then cover, remove from heat. Let the eggs stand covered for 15 to 17 minutes.
Fill a medium bowl with ice water and transfer the eggs to the ice water for 5 to 10 minutes. Peel the eggs under running cool water.
Now, decide which to make!

1. The Classic Deviled Egg
Ingredients
6 large eggs
¼ cup mayonnaise
1 teaspoon white vinegar
1 teaspoon yellow mustard
1/8 teaspoon salt
freshly ground black pepper to taste
smoked paprika and fresh dill weed for garnish

Slice the eggs in half lengthwise. Remove the yolks and place them in a medium bowl, place the whites on a serving platter.
Mash the yolks into a fine crumble.
Add the mayonnaise, vinegar, mustard, salt, and pepper, and mix until smooth. (I use an immersion blender to get them silky smooth.)
Just before serving, fill each egg white with the creamy yolk mixture with a spoon or a piping bag. (Or make your own piping bag with a ziplock!)
Garnish with a sprinkle of paprika and fresh dill weed.

2. Smoked Salmon Deviled Eggs
Okay, we will admit, this one is sort of cheating. It’s a deviled egg with the smoked salmon spread from Prime Cut Meats in Fargo.
Make (or buy) hard boiled eggs, cut them in half lengthwise. Discard the yolk. And fill the white center with a scoop of the salmon spread.

3. Avocado Deviled Eggs
If you have someone who isn’t a fan of mayo or mustard (like JJ), this is the trick to making a deviled egg they will like. And, heck, even if you are a deviled egg purist, you will have to give this one a try.
And, if you are serving during the holidays, feel free to call them Grinch Eggs.

Ingredients
6 Hard Boiled Eggs
2 Tbs Red Onion (finely chopped)
1 Avocado (Pitted and peeled)
1 Tbs Lemon Juice
1/4 tsp Salt
1/4 tsp Pepper
Bacon Cumbles
Pinch of Garlic Salt
Optional – Cayenne Pepper

Slice eggs in half lengthwise and pull out the yolk. Set the egg whites aside. Put yolk, red onion, avocado, lemon juice, salt and pepper into a bowl and mix well (if you use a food processor, that would be even better). Mix well. Put mixture into a plastic baggie and cut a small corner off. Use this bag to squeeze mixture into egg whites. Top with bacon crumbles and a small dash of garlic salt. Add Cayenne Pepper if you want that extra flavor!
