Sour Cream Apple Squares

There seems to be a bumper crop of apples this year, and that happens about every other year. With the cool wet spring that we had I was surprised at how well the apple trees produced. Someone told me that when we have a very large crop of apples we will have a harsh winter to look forward to. I hope that is an old wives tale! In my collection of cook books, I found one that is filled with just apple recipes. Some of them that I have tried for apple crisp are pretty basic, but the one for sour cream apple squares is a little bit different and very tasty. I almost always use butter instead of margarine when baking as I feel the flavor is so much better. I know that butter is quite expensive right now, but I try to purchase butter when it is on special and freeze it to use later.

Sour Cream Apple Squares

2 Cups flour

2 Cups brown sugar

1/2 Cup butter or margarine

1 Cup chopped nuts (I used pecans)

2 Teaspoons cinnamon

1/2 Teaspoon salt

1 Teaspoon baking soda

1 Teaspoon vanilla

1 Cup sour cream

1 Egg, beaten

2 Cups peeled chopped apples

Mix flour, sugar and butter on low speed until crumbly, add nuts. Press 2 3/4 cups of this mixture in 9 x 13 baking pan to make a crust. To the remaining crumb mixture; add soda, cinnamon, vanilla, salt, egg and sour cream. Mix thoroughly and add the chopped apples. Spoon this mixture over the crust. Bake at 350 degrees for 40 minutes. Cut into squares while warm and serve with whipped cream or ice cream.
