Sausage & Potato Soup

I love potatoes! Baked potatoes with the skin greased so the outside is crispy, the skin is better than the inside. Raw fried potatoes in bacon grease with onions added are another favorite. I know that these are not diet foods, but potatoes by themselves are not high in calories, it’s all the added yummy toppings that we use on them. This sausage and potato soup is very spicy if using hot Italian sausage, which we like. The sausage can be in links or bulk, just remove the sausage from the casing to brown it. For those of you who cannot eat spicy foods or do not care for spice, just use any mildly seasoned pork sausage.

Sausage & Potato Soup

1 Lb. Italian Sausage (I use hot)

3 Lbs. of potatoes

6 Cups Chicken Broth

2 Cups Heavy Cream

1/4 Cup Dehydrated Onions

Brown sausage and set aside. Peel potatoes and dice; boil in enough chicken broth to cover until done. When done; put potatoes in the crock pot with browned sausage; add onions and chicken broth and cream. Cook until hot.
