Quick Crockpot Meal

I ran across this recipe as I was looking for a quick crockpot meal with ground beef. I threw it in the crockpot on our way out the door to a football game and we had a great little soup/stew just 4 hours later. It was really cheap to make (after all, the name of it was “poor man’s stew”), I had all the ingredients on hand (and didn’t have to go shopping!) and it was quite good. It also leaves a lot of room to improvise and make your own.

Poor Man’s Stew
1 pound of ground beef, browned and drained
3 medium potatoes, peeled (I left skin on) and diced into large pieces
4 medium carrots, peeled and cut into 1/2 thick slices
1 medium onion, diced
1 can diced tomatoes (14 ounce can)
2 cups beef broth
1 tsp salt
1 tsp pepper
2 teaspoons Italian seasoning
1 tsp onion powder
2 tsp minced garlic

– Add the ground beef, potatoes, carrots and onions to a crock pot.
– In a mixing bowl, stir together the diced tomatoes, broth, salt, pepper, Italian seasoning, onion powder and minced garlic.
– Cover and cook on low for 6-7 hour or on high for 3-4 hours (until the potatoes are tender)
