Last week our church housed the homeless overflow and I took my turn to help with staying for a few hours and provided them with snacks and beverages. With just a little change in circumstances for any of us, we could also become homeless. We sheltered 12 men and 3 women and they were all very polite and grateful for a warm place to stay. It was -25 that night and one of the men had a car that he started at midnight to be sure that it would be running in the morning so that he could get to his job. I am pretty spoiled by having a remote starter on our car and a warm garage. One of the men indicated that it would be nice to have a place in which to shower. I don’t think any of the sheltering churches could provide showers, however I hope that he could get to a shelter where a shower would be available. It was a very humbling experience and makes me stop to think how blessed we are and all the things we take for granted.

This cake recipe is quick and easy and reminds me of a dessert that I have made with fruit cocktail, but this one has crushed pineapple, no shortening and is very moist. It could be served with whipped topping instead of the cream cheese frosting. I usually make a half recipe of this frosting because it is very rich. This is another Facebook recipe.

Preachers Cake

2 Cups white sugar

2 Cups flour

2 Teaspoons soda

2 Teaspoons vanilla

2 Eggs

1/2 Cups chopped nuts

1 Can crushed pineapple (20 ounces) do not drain

Mix all ingredients in the order given; pour into a greased 9×13 pan and bake 350 degrees for 30-40 minutes until done.

Cream Cheese Frosting

1 Package cream cheese, softened (8 ounces)

1/2 Cup soft butter

1 3/4 Cup powdered sugar

1/4 Teaspoon salt

2 Teaspoons vanilla

Mix until smooth and spread on cooled cake. You may want to sprinkle chopped nuts on the top.
