Pecan Bars

This past weekend we attended a wedding at A Friend’s House in Kragnes, MN. The weather was perfect; with a light breeze, low humidity and the ceremony was short. A friend of my husband was joking the we need to get fishing and hunting licenses yearly, drivers license every four years but a marriage license only once. As I thought about that, it would make sense to think back to our marriage vows periodically and the promises that were made before God and our friends and relatives. It sometimes seems that planning a wedding is given more attention than making a marriage work. There is a great deal of give and take for both the husband and wife. Almost 55 years ago when we met with the minister for marriage counseling, he told us that before marriage you keep both eyes wide open and after marriage you close one…..good advice!

This recipe was given to me by a member of the auxiliary at Golden Living Center. She said butter pecan cake mix is not always easy to find; she purchased it at Walmart, but I found it at Cash Wise.

Pecan Bars

1 Box Butter Pecan Cake Mix (Betty Crocker)

1/2 Cup melted butter

Blend the dry cake mix and melted butter together and pat into a greased 9×13 pan.

8 Ounces cream cheese (softened)

1/2 Cup melted butter

2 Eggs

3 1/2 Cup powdered sugar

Mix cream cheese, butter, eggs and powdered sugar until blended and spread over the crust; top with 1 1/2 Cups pecan pieces.

Bake 300 degrees for 1 hour. Cool before cutting.
