Mediterranean Feta Egg Bake

Ingredients:
6 large eggs
2 cups cherry or grape tomatoes
1 red bell pepper, chopped
½ red onion, chopped
3 garlic cloves, minced
8 oz feta cheese
4 tbsp olive oil
1 tsp dried oregano
1 tsp sea salt
½ tsp dried thyme
½ tsp ground black pepper
½ tsp red pepper flakes
1 cup baby spinach
chopped fresh chives

Instructions:
1. Preheat oven to 400 degrees. Drizzle dish with olive oil.
2. Combine the spinach, tomatoes, bell pepper, red onion and garlic and feta in a baking dish or sheet pan and drizzle the olive oil over the feta and veggies.
3. Combine dried oregano, salt dried thyme, black pepper, and red pepper flakes in a small bowl. Stir to combine and sprinkle the spice mixture over the feta and veggies.
4. Bake for 20 minutes.
5. Remove from the oven, create 6 wells in your baking dish and crack the eggs into the wells. 6. Place the dish back into the oven for an additional 10 minutes. (Ovens may vary, keep a close eye on your eggs!)

Top with optional chopped fresh herbs or sliced chives. Or, even add a few more fresh diced tomatoes to the top.

Serve with crusty baguette, toast or pita for dipping.
