What fantastic weather we have had this past week! I am hoping it holds on for our neighborhood block party on Tuesday August 5th. We live here for just these kinds of days, but lots of other reasons to live in this area such as good schools, entertainment, arts, and shopping the farmers markets for those who do not have gardens. I enjoy growing flowers and vegetables and also like to exhibit at the annual garden show for the Eleventh District Horticulture Society taking place this year on Thursday August 7th in Perham, MN. I hesitate to admit how many years that I have been attending the shows; I think my first time to exhibit was 1963! The show is open for public viewing at 3 pm.
Last week I wrote about the fresh peaches that are so good this year. I prepared this recipe for kitchen bars this past week and they were very good, however the crust was too thick for my taste. When I make this again I will just use half the recipe for the crust layer. I will write out the full amounts, but the crust amounts could easily be cut in half.
Kitchen Bars
Crust
1 Cup butter, melted
2 Cups flour
2 Eggs
3/4 Cup sugar
Combine all ingredients and spread in greased 9 x13 pan.
Filling
1 3/4 Cup cream
1 Cup sugar
4 Eggs
1 Teaspoon vanilla
1 Tablespoon flour
Mix well to blend all ingredients. Arrange fresh peach slices or other fruit on the crust and pour the filling over the top. You may omit fruit and just sprinkle cinnamon and sugar over the filling. Bake 325 degrees until done or filling is set; about 45 minutes. These should be stored in the refrigerator.
