If you are lucky enough to come across some fresh sweet corn this month, this recipe is for you! Eat some now, save some for later. It’s always nice to have local sweet corn to throw in a crock pot for Thanksgiving or to add in a hearty chowder in the middle of January. This is a recipe our family uses to freeze corn. It’s quick and easy. (Heck, I have it written on a small sticky note that hangs inside of a cupboard.)
Freezer Corn Recipe
8 cups of corn – cut off the cob
1 cup water
1 tsp salt
1 tsp sugar
4 Tbsp butter
Cook until a simmer, let cook for 3 minutes and let cool.
I measure 1, 2 and 3 cup bags, scoop into freezer friendly bags and lay flat so they are easy to stack.
