This week’s recipe is another dessert for Easter or any other special occasion. I have a tremendous sweet tooth and love rich, decadent desserts. We will be going to our daughter’s home for Easter and I usually make dessert. Some of the family does not care for coconut or pineapple; but strawberries or anything chocolate always wins. When I was executive director of a senior retirement complex, I usually asked what was being served for dessert. I remember one resident in particular that always ate her dessert, (if it was on the table) before the meal was served. She said that she wanted to enjoy her dessert before she got too full. She must have heard the saying “Life is unpredictable, eat dessert first.”
I found this recipe on Facebook using pineapple, but you could also use any fruit. I think strawberries or peaches in season would work well. Have a blessed Easter.
Pineapple Cream Cheese Cobbler
1/2 Cup butter
1 Egg
1 Cup milk
1 Cup flour
1 Cup sugar
2 Teaspoons baking powder
1/2 Teaspoon salt
2 Cans pineapple chunks (drained) 20 ounce
8 Ounces of cream cheese, cut in small cubes
Pour the melted butter in 9 x13 glass baking dish. In a bowl; mix egg, milk, sugar, flour, salt and baking powder until blended. Pour batter over the butter in the pan, do NOT stir. Arrange drained pineapple chunks evenly on the batter in single layer. Drop the diced cream cheese pieces over the pineapple.
Bake 350 degrees for 45 minutes or until brown and bubbly.
