The strawberry season in Minnesota is here and they are so good. There are places that you can go to pick them yourself, but I like to let someone else do the picking! I got this recipe from a neighbor several years ago and I make it whenever I can get the home grown strawberries. I have also made this same recipe using fresh peaches in season and use the peach gelatin in place of the strawberry.
Serve with whipped cream or scoop of vanilla ice cream.
Fresh Strawberry Dessert
Crust:
1 Cup butter
2 Cups Flour
2 Tablespoons sugar
Blend butter, flour, and sugar together, press into 9×13 pan and bake at 350 for 20 minutes.
Glaze:
2 Cups water
2 Cups sugar
1/4 Cup cornstarch
4 Tablespoons strawberry gelatin
Boil water, sugar and cornstarch until clear, remove from heat and stir in gelatin. Mix well.
Place 6 cups fresh strawberries on crust, pour glaze over berries and refrigerate until set.
When using fresh peaches, scald and peel the peaches and overlap slices on the crust.
