For the onion lovers

From the Kitchens of Amy & JJ

Did you know that we are in a golden age of onions?!? For the onion lovers out there, we are not relegated to a single variety. Instead, we can enjoy Walla Walla Sweet Onions, pre-peeled Pearl Onions – heck, you can find shallots in almost every grocery store YEAR ROUND! This recipe comes from a friend who uses their air fryer three times a week. On a recent evening, they needed to spruce up a steak dinner and wanted to use the air fryer. This recipe became the standout of the meal and the happy diners requested thirds of this play on a restaurant favorite.

Crikey! Air Fryer Baby Blooming Onions
4 Small Onions (sweet variety is my preference)
1 Cup All Purpose Flour
1 Tsp Paprika
1/2 Tsp Garlic Powder (not salt, powder)
1/2 Tsp Onion Powder (not salt, powder)
1/2 Tsp Salt
1/4 Tsp Black Pepper
2 Large Eggs
1 Cup Bread Crumbs
Cooking Spray

Preheat Air Fryer to 350 degrees
Peel the onions and cut off the top, leaving the root end in tact. Make cuts from the top down so you get a “petal” look – but do not cut all the way through!
In a bowl, mix flour, paprika, garlic powder, onion powder, salt and black pepper.
In a different bowl, beat the eggs and dip the onions into the eggs then dredge them through the bread crumbs. No need to heavily coat the onion, just enough to provide a light breading.
Arrange onions in the air fryer basket and cook them at 350 degrees for 20 – 25 minutes, they should pull apart easily when you tug at one of the petals.
Serve hot and enjoy as a side dish or an appetizer – put out a variety of sauces for dipping. If you have any horseradish – you are in for a real treat!
