It seems like darkness comes too early. I would like to see daylight until at least 8 pm; but I will just have to get used to the changing hours of daylight and darkness. It also seems that there is never enough time to get all the outdoor chores done. Fall is so busy for many with school activities, football games and harvest for some of us. One-dish meals and casseroles are easy to make and will usually be OK to serve if they have to be held on warm while waiting for everyone to come home and eat. This chicken casserole recipe could be made with cooked chicken breasts, canned chicken, leftover chicken or a rotisserie chicken from the grocery store.
Dorito Chicken Casserole
2 Cups shredded cooked chicken
2 Cups shredded Mexican cheese blend (divided)
1 10 Ounce can cream of chicken soup
1/2 Cup milk
1/2 Cup sour cream
1 Can Ro-tel tomatoes, 10 ounces (drained)
1/2 Packet taco seasoning
1 Large bag Doritos
Shredded lettuce (optional)
Diced tomato (optional)
Blend chicken, 1 cup shredded cheese, soup, milk, sour cream, Ro-tel tomatoes and taco seasoning; mix well. Grease a 2 quart casserole dish and place a layer of crushed Doritos on the bottom. Top with layer of chicken mixture, another layer of Doritos, chicken layer and another layer of Doritos and top with chicken mixture. Sprinkle remaining cheese on top and a thin layer of Doritos, if you wish. Cover and bake at 350 degrees for 25-30 minutes until bubbly. Serve with lettuce and tomatoes if desired.
