Cinnamon Roll Cake

Happy Mother’s Day to all the mothers out there, I hope you have a fantastic day. My niece from Grand Forks has planned a potluck get together for our families for that day in Moorhead. It seems that we only see extended family at funerals and an occasional wedding, confirmation or graduation. So far as I know, we will have only 2 high school graduations in our family, but my husband and I have three of our grand kids graduating from college this year. Our daughter from Williston and her husband plan to visit this coming weekend so I will test this recipe on them that I found on Facebook. I told one of the granddaughters that I need a tall girl to climb on a ladder and clean the tops of the kitchen cabinets for me with the payoff being Cinnamon Roll Cake. I don’t think she is hungry or does not have any time to spare with finals as I have not yet seen her!

3 Cups flour

1/4 Teaspoon salt

1 Cup Sugar

4 Teaspoons baking powder

1 1/2 Cups milk

2 Eggs

2 Teaspoons vanilla

1/2 Cup melted butter

Stir together flour, salt, baking powder, sugar, milk, eggs and vanilla. Lastly, stir in the melted butter. Pour into a greased 9 x 13 pan.

Make topping by mixing the ingredients until well blended and drop evenly over batter, swirl topping through the batter with a knife to marbleize. Bake in 350 degree oven for 35-40 minutes until done, or inserted toothpick comes out clean. Drizzle the glaze over warm cake after baking.

Topping

1 Cup softened butter

1 Cup brown sugar

2 Tablespoons flour

1 Tablespoon cinnamon

Glaze

2 Cups powdered sugar

5 Tablespoons milk

1 Teaspoon vanilla

Serve warm or cold.
