In honor of our birthday, here’s a cake recipe from the 2019 KFGO Listener Cookbook!
Guinness Chocolate Cake
Cherie Muller – West Fargo, ND
1 Cup Guinness Beer
1/2 Cup + 2 Tbsp Butter
1/2 Cup Cocoa
2 Cups Sugar
3/4 Cup Sour Cream
2 Eggs
1 Tbsp Vanilla
2 Cups Flour
2 1/2 tsp Baking Soda
8 Ounces Cream Cheese
1 1/4 Cup Powdered Sugar
1/2 Cup Heavy Cream
Cake: Oven 350 degrees. Grease and line springfoam pan with parchment paper (tin foil works, too). Pour Guinness in large saucepan & add sliced butter. Heat until butter is melted & remove from heat. Whisk in cocoa & sugar. In separate bowl, beat sour cream with eggs and vanilla – add to Guinness mixture. Beat in flour & baking soda. Pour in greased and lined pan. Bake 45 minutes to an hour. Check with a toothpick for doneness. Cool completely in pan on a wire rack. Frosting: Beat powdered sugar and cream cheese until creamy. Slowly add heavy cream and beat until spreadable. Frost the cake and enjoy!
