Buffalo Chicken Meatballs

Ingredients
1.5 lbs ground chicken (or turkey)
1/2 cup panko or Italian bread crumbs
1 egg
1 celery stalk (finely chopped)
1 carrot (shredded)
1/2 – 1 medium red onion
2 cloves minced garlic
3 tsp ranch seasoning
Salt & Pepper to taste
3 Tbsp + 1/3 cup buffalo sauce (seperately)
For topping: green onion, more buffalo sauce, ranch or blue cheese

Serve with Rice of choice and veggies

Preheat oven to 400 degrees,. In a large bowl, combine the chicken (or turkey), bread crumbs, egg, celery, carrot, garlic, onion, ranch seasoning, 3 Tbsp buffalo sauce, salt and pepper and mix until well combined. Roll into balls and place on a greased sheet pan. Bake for 25 minutes or until meatballs look golden brown and slightly crispy.

While meatballs are baking, prepare rice and veggies. Remove meatballs from oven when they’re done and mix with the remaining 1/3 cup of buffalo sauce.

This is a perfect meal to prep for your lunches or eat fresh!
