When entertaining, it is convenient to make appetizers ahead of time and freeze until you are ready to serve your guests.
These broccoli bites take a little time to prepare and it is an appetizer that I always make and freeze to use later. I just form them into balls and freeze on a cookie sheet, and place into a zippered plastic bag until I want to bake and serve them. They will keep well for about a month, but I have kept them a little longer. You may vary this by using two 10 ounce packages of chopped spinach (cooked) in place of the broccoli.
Broccoli Bites
6 Cups frozen chopped broccoli
2 Cups crushed seasoned stuffing
1 Cup grated Parmesan cheese
6 Eggs, lightly beaten
1/2 Cup softened butter
1/2 Teaspoon salt
1/4 Teaspoon pepper
Cook broccoli according to package directions, drain well and place in a bowl. Stir in the remaining ingredients. Shape into one inch balls. Place on a greased 10 x 15 pan.
Bake at 350 for 11-12 minutes until golden brown. To use frozen appetizers, bake at 350 for 16-18 minutes until golden brown. This will make about five dozen.
