This is a perfect recipe for the kids (or kids at heart). Knox blocks were something that always appeared at family gatherings growing up. Thanks to my Aunt Beth, they appeared at this year’s Easter gathering and it turns out my kids love them too. So, this might be less of a “recipe” and more of a reminder to bring back the simple things every once and awhile.
Knox blocks are a simple and fun finger food you can add to any menu. If you want to use utensils, serve with a dollop of cool whip.
We cut them into blocks, but feel free to pull out the cookie cutters or cut into other shapes. And when you make them, you can even try mixing flavors.
Knox Blocks
Ingredients
3 packages of Jell-O (3 ¼ ounce package) – any flavor
4 envelopes of Knox gelatin (1 box)
4 cups boiling water
Directions
Mix jello and gelatin together.
Boil 4 cups of water. (I use my electric tea kettle to make it easy)
Once the water is boiling, pour it into the boil with the jello and gelatin, whisk until completely dissolved.
Pour into a glass dish. I like to use the 8×12-inch pan.
Cover with plastic wrap and refrigerate until set.
Cut into blocks (or whatever shape you want) and enjoy!
