We rented a home at the lake last summer and all of our kids and their families spent the week with us. Each family had a night to plan, purchase and prepare food for their assigned day; which was nice for me so that I did not spend all my time indoors with food preparation. The house slept ten and we had plenty of space to put up tents; we were fortunate enough to have a beautiful week. Our son Paul and his wife from MO served us this pork steak recipe that I wanted to share with you now that we are in the summer mode of outdoor cooking.
BBQ Pork Steak
Pork Steaks- 1” – 1 ½” thick.
Make a brine:
1 Gallon water
2 Cups sea salt
½ Cup BBQ rub
1 Tablespoon whole pepper corns
1 Tablespoon garlic powder
2-3 Bay leaves
Mix half the water with dry ingredients in a large pot and boil until dissolved. Add several handfuls of ice it cool and pour in the remaining water.
Place pork steaks into the brine and refrigerate for 1 – 2 hours.
Remove and drain off excess liquid. I use a paper towel to blot each one to remove the moisture.
Next, liberally sprinkle on some store purchased BBQ rub (or make your own) and cover each side evenly. Allow meat to rest for 30 – 45 minutes at room temperature.
Cook Pork Steaks over direct heat (250 – 275 degrees). It takes about 90 minutes, flipping every 15 minutes or so to develop just the right color on each side. During the last 20 minutes of cooking, glaze each side with your favorite BBQ sauce. Let the sauce caramelize on each side for about 10 minutes.
Pork Steak is a lot like pork loin or pork chops but better because that inner connective fat will render and really flavor the meat.
