A friend just gave me a big box of apples! Our grandkids like apple butter on English muffins or toast so I will be making some to give to them to take back to their apartments and homes. We had a granddaughter get married in the fall a few years ago and she asked me to make apple butter as a favor for each guest to take home. I said I would do it but I needed help with the apple peeling.
The girls peeled and froze apples so that I could cook them in a crock pot at night and in the morning I added the sugar and cinnamon to cook down all day. When I got home from work late in the day, I would put it in 6 ounce jars and process to seal. I did this over a period of several days and the house always smelled so good when I came home. I made 300 jars for her wedding! I do not have a specific recipe so I will try to give you the proportions of apple pulp and sugar. I use mostly white sugar, but sometimes I will use a little bit of brown sugar, I just add cinnamon to taste. When I looked up recipes for apple butter, it had some vinegar in it, I would rather use lemon juice.
Apple Butter
Wash peel and core apples and cut into chunks. Place in crock pot on low setting and cook several hours to make pulp. I use about 1/2 teaspoon cinnamon 1/2 cup of white sugar per cup of pulp. You could add about 1 tablespoon vinegar or lemon juice for two cups of pulp mixture. Cook several hours until thickened, put hot apple butter in sterilized jars and seal.
