Pasta, in any form, is rarely turned down in our house. But, if you are bored with spaghetti, give this recipe a try. It’s an easy weeknight meal, and will sneak some spinach into your diet!
Vegetarian Manicotti
Ingredients –
1 jar chunky spaghetti sauce
2 – 10 ounce packages of frozen spinach (thaw & drain)
1 – 12 ounce cottage cheese
1/8 cup parmesan cheese
1 tsp. oregano
1/4 tsp. pepper
1 package manicotti (14 tubes)
2 cups mozzarella cheese
Directions –
1. Spread 1/3 sauce on the bottom of a 9×13 pan.
2. Mix spinach, cottage cheese, parmesan cheese, oregano and pepper.
3. Fill shells with mixture (no need to cook the shells first)
4. Put shells in pan and cover with remaining sauce – Bake for 1 hour.
5. Sprinkle cheese over and return for 15-20 minutes.
