All About Asparagus

It seems spring has sprung… and we are thinking all things green with these two recipes! Also, easy recipes to give you more time to enjoy the warmer weather.

Spring Pasta
Ingredients –
2 1/2 cups pasta
2 1/2 cups asparagus
1 cup of peas
Half cup of cream cheese
1 Tbsp pesto

Instructions –
1. Boil pasta accounting to packet instructions.
2. Halfway through, add the asparagus and peas.
3. Once the pasta is cooked, save a little pasta water and drain everything.
4. Add the pasta, asparagus and peas back to the saucepan and add the cream cheese, pesto and pasta water.
5. Mix thoroughly, season if you wish.

Asparagus a la Caesar
For an easy and tasty way to kick up roasted/grilled asparagus, look no further than Ken’s Dressing. This brand is found in most grocery stores.

Roast/Grill your asparagus by lightly oiling the asparagus and a shake or two of salt and pepper. Once the asparagus is done to your liking (some prefer firm others like squishy), remove from heat and put on a plate to serve.

Use Ken’s Steakhouse Dressing – specifically the Light Caesar Dressing (uses oil and has a nice sharp flavor) – and lightly coat the asparagus. No need to let it sit, ready to serve right away.
