Taking a page from a 1950s hostess, aka my grandmother, this recipe is a go to when I am invited to an event. Never show up empty handed! Simple and easy, these cucumber sandwiches require almost no effort and are nearly impossible to mess up.
Cucumber Sandwiches
1 large cucumber, cut into 1/4 slices
1/2 loaf rye bread, cut into four square pieces
1 8oz package cream cheese
1 packet dry Italian dressing mix
Combine the cream cheese and Italian dressing mix. Cut each slice of rye bread into four square slices. Spread the cream cheese and dressing mixture onto the bread slices. Don’t be conservative, but don’t be thick. The bread should be able to support the mix without flopping. Add the sliced cucumber and they are ready to serve! Pro tip – if you are making these in advance, you can finish them but make sure to cover and keep in the fridge, no more than two hours in advance.
