A lovely fall snack

A co-worker (Thanks, Becky!) brought these fluffy cake donuts to us and they were a lovely fall snack (or breakfast, or dessert). Heads up – you will need 6 silicone donut molds for this recipe. This recipe is courtesy of Raddish.

Apple Cider Donuts
Ingredients –
1 cup flour
1 tsp baking powder
1/4 tsp kosher salt
1/8 tsp ground nutmeg
3/4 tsp ground cinnamon
3 Tbsp butter
1 egg
1/3 cup brown sugar
1/3 cup apple cider
1/2 tsp vanilla
4 Tbsp butter 1/3 cup sugar
1 tsp ground cinnamon

1. Preheat over to 350 degrees. Set donut molds onto baking sheet.
2. Combine flour, baking powder, salt, nutmeg, and 3/4 tsp cinnamon in medium bowl. Set aside.
3. Heat 3 Tbsp butter in a small, microwave-safe bowl until melted. 30-60 seconds.
4. Crack egg in large bowl. Whisk until smooth.
5. Add brown sugar, apple cider, vanilla, and melted butter to egg. Whisk until combined.
6. Add dry ingredients to wet ingredients. Stir until just combined.
7. Use a spoon to fill molds until almost full, diving batter evenly between 6 molds.
8. Bake until a toothpick inserted comes out clean, 15-17 minutes. Cool for 5 minutes.
9. Meanwhile, heat 4 Tbsp butter in small microwave-safe bowl until melted, 30 – 60 seconds.
10. Stir sugar and 1 tsp cinnamon in small bowl.
11. Flip molds and gently remove donuts.
12. Dip both sides of each donut in butter, let excess drip off, then dip lightly in sugar.
