A great save-for-the-Holidays recipe

Here is a “famous” recipe that is making its way around the internet again… it is Taylor Swift’s Chai Sugar Cookie recipe, which first turned up on her Tumblr account in her own handwriting. This would be a great save-for-the-Holidays if you have a Taylor Swift Fan coming over.

Taylor Swift’s Chai Sugar Cookie recipe

Ingredients
1/2 cup (1 stick) unsalted butter, at room temperature
1/2 cup vegetable oil (I like canola or sunflower oil)
1/2 cup granulated sugar
1/2 cup powdered sugar
Pinch of fresh cracked black pepper
1 large egg
2 teaspoons of vanilla extract or the seeds of 1 vanilla bean pod
2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon kosher salt
1 Chai Tea Bag

Preparation –
Oven at 350 degrees, grease cookie sheet
Beat butter and add oil
Add sugar, powdered sugar, egg and vanilla
Stir in flour, baking soda, salt and tea
Chill the soft dough for about 1 hour
Line cookie sheet with 12 tablespoons of dough drops
Press evenly and cover with sugar.
9ish minutes in the oven
Cover with icing when cooled completely.

Now, the recipe did not include the icing. However, her cookies are a “Taylor’s Version” of the 2009 Joy the Baker recipe and this is her icing recipe:

Icing ingredients –
1 1/2 cups powdered sugar
1/4 teaspoon ground nutmeg, plus more for sprinkling the top of the cookies
3 tablespoons whole milk or eggnog

In a medium bowl, whisk together the glaze ingredients to thick but spreadable. Spread each cooled cookie with graze just over the center, leaving the edges of the cookie free of glaze. Sprinkle with a bit of fresh nutmeg if you have it. Store cookies in an airtight container at room temperature for up to 4 days.

Also, if you don’t have a chai tea bag… maybe substitute Joy the Baker’s ingredients –
1 1/2 teaspoons ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cardamom
1/8 teaspoon ground cloves

And, of course, we should probably recommend listening to some Taylor while you are baking. Enjoy!
