With the Minnesota State Fair upon us, we thought it was fitting to feature a recipe from our KFGO News Director, Paul Jurgens. Anyone who spends time in Minnesota during the summer knows that from small town festivals to the Minnesota State Fair, cheese curds are a MUST. Now that air fryers are found in most kitchens, here is a great recipe for those craving a delicious cheese curd. (Maybe keep this in the recipe box for the middle of winter, when you haven’t had one in awhile!)
Cheese Curds – State Fair Style
– 1 cup all-purpose flour
– 3 eggs
– 2 cups Panko bread crumbs
– 1 tsp. garlic powder
– 1/2 tsp. cayenne pepper
– 12 oz. white cheese curds (or any color, really)
– Shot of PAM spray
– Whatever you like to use as a dip (buttermilk ranch is a favorite)
Heat air fryer to 350 degrees.
Place the flour in a bowl. Lightly beat eggs in a separate bowl. Combine the bread crumbs, garlic powder and cayenne pepper in a third bowl.
Dredge the cheese curds, a few at a time, in the flour. Then drip them in the eggs and then coat them with the bread crumb mixture. Shake off any excess coating between steps.
Place the coated curds aside, don’t over stuff the fryer. Might take multiple rounds, depending on the size of your fryer. Just before placing them in the air fryer basket, lightly spray the first batch of curds with cooking spray. Arrange the prepared curds in a single layer in the fryer basket. Set a timer for 5-7 minutes. Fry the curds for 3 minutes, and then remove the basket and flip the curds. Cook 2-4 minutes longer or until the curds are a light brown, crispy and beginning to melt. Repeat with remaining curds, starting with a light shot of cooking spray.
Serve hot, napkins are required!
