The big wedding is over for our newly married granddaughter Erica Ziegler. Erica and new husband Spencer Hilde are off to Jamaica for their honeymoon. It was a beautiful wedding and they are such a perfect couple. I can’t help but think about the mothers of the newlyweds and what a big letdown for them after all the planning for the event these past months. The rehearsal dinner on Friday night, church, flowers and food at the venue were all very well planned and I don’t think they could have improved on anything. Oh yes, we were a bit crowded at the reception dinner but it was still perfect.
I am off to New Orleans next week, so I do not feel any let down as I am packing to go.
The recipe for today uses a cake mix and canned apples, but one could use fresh apples and add cinnamon and sugar to them and bake a little longer until the apples are cooked. Cake mixes are used in many recipes and are so convenient when we have such busy lives. Next week I will also share a recipe using a cake mix.
Caramel Apple Cobbler
1 Box yellow cake mix
2 Cans apple pie filling
1 Jar caramel sauce
1 Stick butter
Grease 9 x 13 pan, spread apple pie filling over the bottom of pan and pour about 1/2 cup of caramel topping evenly over apples. Sprinkle dry cake mix over the top and drizzle melted butter over the cake mix; bake at 350 degrees for 45 minutes. Serve with whipped cream or ice cream.
