With spring comes thoughts of salads and picnics, but today is cool and rainy and I am thinking about making soup! Recently a friend shared some of her recipes with me and this soup is one that I will make for Sunday evening supper. She notes that it tastes very much like the beer cheese soup that made the Grainery famous that was located in West Acres. I remember this soup was served with popcorn, but you could also top with croutons. It looks like this would make quite a few servings so we will have some left over for another meal. I could make just half a recipe, but then what would I do with the rest of the beer?!! It would be appreciated if some of you would share your recipes with me for future use.
1/4-1/2 Cup flour
1/2 Cup butter or margarine
4 Cups chicken broth
16 Ounce jar Cheez-Whiz
1 1/2 Cups cream
6 Ounces of beer
1 Tablespoon Worcestershire sauce
Yellow food coloring
1/4 Cup chopped chives
Melt butter and flour, cook over low heat about 5 minutes. Gradually add broth and cream stirring well to keep the mixture smooth. Cook until thickened; add cheese stirring until melted and until well blended. Add beer, Worcestershire sauce and a few drops of yellow food coloring and chives. Simmer about 15 minutes. Top with popcorn or croutons.
