Blueberries have been on sale recently and I like to purchase and freeze them to use over the next few weeks; sprinkling a few on pancakes or add to muffins. I just freeze them in the carton and rinse and use them when baking later. They may lose a little of the antioxidants but they freeze well and do not break down. Blueberries are second to strawberry consumption in the US. This little fruit is packed with antioxidants, vitamin K & C, also manganese, fiber and copper. The blueberry has the highest antioxidant level of any other fruit, vegetable, spice or seasoning. It is also said to improve memory, cardiovascular health, insulin levels, reduce cancer risks and has only 80 calories per cup. I found this recipe on Facebook and I baked it today; it was yummy!
