During the mid 1980’ and through the 1990’s I managed a retirement complex where daily meals were included in the rental fee. I was very proud of the fact that the meals were made from “scratch”. Real mashed potatoes and home made soups and desserts that were prepared by a wonderful kitchen staff. The home baked goods were enjoyed by all of us and I have a sweet tooth so I usually wondered what was for dessert. One of the cookies that were made were waffle iron cookies. These cookies can be frosted with your favorite frosting (chocolate) or dusted with powdered sugar. They kind of reminded me of turtles. No waffle iron? Just drop the dough by teaspoons and bake on a cookie sheet in the oven.
Chocolate Waffle Cookies
1/2 Cup softened butter
2/3 Cup white sugar
2 Eggs
1 Teaspoon vanilla
1 1/4 Cups Flour
1/4 Cup cocoa powder
1 Teaspoon baking powder
1/2 Teaspoon salt
1/2 Teaspoon cinnamon
1/2 Cup chopped nuts (optional)
Cream butter and sugar until fluffy, add eggs and vanilla and beat well. Sift together the dry ingredients and blend into creamed mixture. Add nuts if you want them. Drop by heaping teaspoons two inches apart on preheated waffle baker. You may want to use a cooking spray on bottom and top of the waffle iron for easy removal. Bake until done, about a minute, remove and cool on wire rack. Frost when cool or dust with powdered sugar. When baking in the oven, drop dough by teaspoons two inches apart on a greased cookie sheet and bake 350 degrees for about 10 -12 minutes or until done.
