After submitting the recipe for Chocolate Zucchini Cake, I looked up zucchini on the internet. There are so many recipes for using this very prolific summer squash; fritters, soups, casseroles, breads, dips and relish.
If someone sneaks zucchini into your garage, home or back seat of your car; I suggest searching for some of these recipes.
This recipe with cream frosting is one of my family’s favorites; actually I think it is the frosting that they really want.
Sometimes I sprinkle additional nuts on the frosting. Yummy!
Zucchini Bars
3 Eggs
1 Cup oil
2 Cups sugar
3 Teaspoons vanilla
Mix well and add
2 Cups grated zucchini
2 Cups flour
2 Teaspoons soda
1 Teaspoon baking powder
1 Teaspoon salt
3 Teaspoons cinnamon
1 1/2 Cups chopped nuts
3/4 Cup raisins (optional)
Bake in greased 10 x 15 pan 35-40 minutes @ 325
Cool and frost with
8 Ounces cream cheese, softened
1/4 Cup butter
1 Teaspoon vanilla
2 Cups powdered sugar or more
Cut and store in refrigerator
